An Analysis of Money Spent by Certain Boarding Houses Patronized by Men and Women of the North Texas State Teachers College

Description: 1. A study was made of the food habits of college students. 2. Nine women's and five men's boarding houses contributed data over a period of 15 to 84 consecutive days regarding food purchases and the number served. 3. The individual houses reported from 24 to 323 students fed daily. 4. In no case was the food expenditure for fruits and vegetables less than 20 per cent, the range being 21 to 38 per cent. 5. Description: The purposes of the present study are to determine the ascorbic acid values of foods served in the lunch room of North Texas State Teachers College Demonstration School at the time food preparation is completed, at the beginning of the serving period, and at the end of the serving period; to ascertain the loss of ascorbic acid during these intervals; and to determine the quantity of ascorbic acid present in the size portions served primary, elementary, and high school students.

Description: Forty Sprague Dawley rats were randomly placed in five groups with eight rats per group. Each group varied in dietary composition for fiber type and carbohydrate source.
