Description: Forty Sprague Dawley rats were randomly placed in five groups with eight rats per group. Each group varied in dietary composition for fiber type and carbohydrate source. Groups one and two received oat fiber and either sucrose or corn starch as the carbohydrate source. Description: The purposes of the present study are to determine the ascorbic acid values of foods served in the lunch room of North Texas State Teachers College Demonstration School at the time food preparation is completed, at the beginning of the serving period, and at the end of the serving period; to ascertain the loss of ascorbic acid during these intervals; and to determine the quantity of ascorbic acid present in the size portions served primary, elementary, and high school students.

Description: Since sweet potatoes, which also furnish vitamin A, are a common food in the popular diets of Texas and are so generally grown over the state, the purpose of this study is (1) to ascertain the amount of vitamin C in eight of the varieties most commonly grown and (2) to determine the effect of the three most popular methods of cooking (boiling, baking, and candying) on the vitamin C content of these varieties of sweet potatoes.

An Analysis of Money Spent by Certain Boarding Houses Patronized by Men and Women of the North Texas State Teachers College

Description: 1. A study was made of the food habits of college students. 2. Nine women's and five men's boarding houses contributed data over a period of 15 to 84 consecutive days regarding food purchases and the number served. 3.
