An Analysis of Money Spent by Certain Boarding Houses Patronized by Men and Women of the North Texas State Teachers College

Description: 1. A study was made of the food habits of college students. 2. Nine women's and five men's boarding houses contributed data over a period of 15 to 84 consecutive days regarding food purchases and the number served. 3. The individual houses reported from 24 to 323 students fed daily. 4. In no case was the food expenditure for fruits and vegetables less than 20 per cent, the range being 21 to 38 per cent. 5. Further Studies on the Dark Adaptation of Elementary School Children

Losses of Vitamin C Content During the Cooking of Summer Squash

Description: The general food supply is usually the source of vitamin C for many people, and since squash is a common food in the popular diets of Texans and is so generally grown over the state, this study has a two-fold purpose: (1) to ascertain the amount of vitamin C in the two varieties of squash most commonly used as food in Texas, and (2) to determine the effect of various methods of cooking upon the vitamin C content of these two varieties of squash.
