Description: Forty Sprague Dawley rats were randomly placed in five groups with eight rats per group. Each group varied in dietary composition for fiber type and carbohydrate source. Groups one and two received oat fiber and either sucrose or corn starch as the carbohydrate source. Description: Weight loss maintenance and emotional and physical problems were investigated in subjects on a protein-sparing modified fast. Four months following a weight reduction program using the protein-sparing modified fast, twenty of the forty-two subjects were contacted. Description: The purposes of the present study are to determine the ascorbic acid values of foods served in the lunch room of North Texas State Teachers College Demonstration School at the time food preparation is completed, at the beginning of the serving period, and at the end of the serving period; to ascertain the loss of ascorbic acid during these intervals; and to determine the quantity of ascorbic acid present in the size portions served primary, elementary, and high school students.
